
For Valentine’s Day this year, I have a very succulent 1 pan dish for balsamic glaze chicken! With plenty of mushrooms and onions, I recommend you have this with steamed broccoli and red skin mashed potatoes.
(I am trying to make Lobster Bisque for the first time this Valentines, will post a recipe for THAT in the future!)
Ingredients
- 2 lbs chicken breast, cut thin or cut into tenders
- 1 Tbs salt
- 1 Tbs pepper
- 1 Tbs dried parsley
- 3 Tbs olive oil
- 1 pack chopped bella mushrooms
- 3 medium yellow onions, julienned
- 1 cup chicken broth
- 1 small bottle balsamic glaze
Instructions
- Toss chicken in salt, pepper, and parsley, pan sear in olive oil over medium heat until browned. Add chicken stock at and cover to bring to a simmer, let simmer for 5 minutes.
- Remove chicken from pan, reduce drippings down. Add onions and mushrooms to the pan, saute until beginning to brown. Once caramelized, add bottle of glaze and toss chicken back in, simmer for 5-10 minutes. Use sauce as a gravy.
- Recommend you serve with red skin mashed potatoes and steamed broccoli.
Yield: 3-4 servings
