
Made with green Tabasco, this wing was one of the first I came up with. About half as spicy as the classic buffalo sauce, its flavor focuses on the savory tang of green chiles, with garlic and celery notes. Also, was the first wing sauce I have entered at the National Buffalo Wing Fest Creative Sauce Contest, it took second place in 2024!
Ingredients
- 4 (5 fl oz) bottles green Tabasco
- 16 Tbs. unsalted butter
- 4 tsp. celery seed
- 3 Tbs. garlic, minced
Instructions
- Mix all the ingredients in medium saucepan and place over medium heat.
- Bring to a low boil while stirring regularly. Turn down the heat to low and simmer for 10 minutes.
- Personally I prefer to grill my wings (propane grill, low heat, flipping every 15 minutes for about 45 minutes, usually by then the internal heat hits 180F). However you like to cook your wings, once they register 180F, give them a toss in this sauce, throw them back on the grill for 5 minutes to sear the flavor in, then toss them in the remaining sauce before digging in.
Yield: About 2 cups of sauce, enough for about 2 lbs of raw wings
