
The key to this pie is the topping, the pecans and granola makes for a truly decadent blueberry pie.

Ingredients
- Filling
- 3 lb. frozen blueberries (recommend Wyman’s)
- 1 cup sugar
- 3 Tbs lemon juice
- 1.5 tsp salt
- ¾ cup King Arthur pie filling enhancer
- Crust
- 1 cup butter (2 sticks)
- ½ cup powdered sugar
- 2 cups flour
- ¼ tsp baking powder
- Crumble Topping
- 1/3 cup pecans
- 1/3 cup Nature valley granola
- 1/3 cup light brown sugar
- 1/3 cup flour
- 3 Tbs unsalted butter
- ½ tsp salt
Instructions
- To make crust, melt butter in microwave, and sift together the flour sugar, and baking powder. Combine in stand mixer with paddle. Pat into a 9 inch pie plate and set aside. Preheat oven to 350F.
- Add all filling ingredients to pan except the filling enhancer. Stick occasionally until pot is simmering, then gradually stir in filling enhancer.
- Combine all ingredients for crumble topping in food processor, then top pie with mixture.
- Bake pie for 15-20 minutes, or until edges are lightly browned.
- Serve with vanilla ice cream and/or whipped cream.
Yield: 1 pie

The Perler Pit is getting a booth at Occoquan River Fest this weekend! Saturday, June 6 – Sunday, June 7, I will be running a booth in Historic Occoquan. Come on by if you wanna buy some video game or anime related pixel art to decorate your living space or get some ornaments ahead of time for the holidays!
