Duck Chops

Very simple recipe for VERY delicious pork chops; the key ingredient is duck fat, specifically one of those spray cans of it you can now find at the grocery store! Cooking it on the propane grill burns off all the fat, leaving you with just succulent flavor.

Ingredients

  • 1 Tbs dried parsley
  • 1 Tbs dried thyme
  • 1 Tbs dried sage
  • 1 Tbs dried rosemary
  • 1 Tbs garlic salt
  • 1 Tbs onion powder
  • 1 Tbs black pepper
  • 1 tsp paprika
  • 3 lbs pork chops
  • Spray duck fat

Instructions

  1. Combine all seasonings into a rub, rub down the pork chops. Spray generously with duck fat, put in Ziploc bag and marinade overnight.
  2. Preheat propane grill on high for 6 minutes. Drop to low, then put pork chops on, grill for 8 minutes on either side. Check to make sure internal temp is 145F; once reached, remove from grill, cover, and let rest for 5 minutes before serving.

Yield: 6 servings
